About This Recipe

Mashed yam! if you like mashed potatoes, you would love mashed yam especially the sweet old yam.

I was making my BBQ chicken here and I needed a side. I checked my pantry and there were no potatoes, but I found half of a tuber of yam, so I had a bright idea to make yam mash! Eureka!

At first my ajebutters asked “mommy you want to mash the yam?” and I replied “yes!” I encouraged them to watch and see the magic and they waited patiently for my results. Let us say  that by the time they were done eating, I got a lot “hmmm mommy, I love you”

I always say, once you can cook to please your children, then the sky is your limit.

I also have to make some for my sister. I know she will ask me “kedi ihe o bu”; meaning what is this? 🙂 My sister loves yam and my mom made yam almost a hundred ways, so we never had the same kind of yam when mommy made yam.

It was a happy evening and if not for the expensive nature of yam, I would have made this every week.

Ps: for my ajebutters portion, I did not use the Cameroon pepper as it is super spicy

You may add Mozzarella or Parmesian cheese if you have access to anyone

Here is my simple recipe for you

Nigerian Lazy Chef

Ingredients

12 small yam pieces. cut and peeled
1 tsp black pepper
a pinch of Cameroon pepper(optional)
½ cup of milk
⅓ cup of butter
½ inch grated ginger
2 grated small garlic cloves.
salt to taste
A handful of any type of cheese(optional)

Instructions

  1. Cut yam into small sized pieces; then wash and boil until soft
  2. Drain water and mash into a smooth paste while adding the milk. Or you may use a food processor
  3. Add the ingredients and seasonings, whip the mashed yam some more and serve. You may serve with melted butter, spring onions and a sprinkle of cameroon pepper or any chili flakes
